OOOooohh lala! After work yesterday, I headed to Kroger and was roaming the grocery store trying to think of dinner ideas. I was in a cooking mood, but I've eaten so much tortellini in the past two weeks I'm afraid I'll turn into one. Then it struck me.

! Eh? I had never made one before, but I was totally feeling (adventurous and) a flaky, savory casserole-type thing. After consulting Michelle, who is very familiar with the dish, I had my ingredients and was out the door (after spending only $7.52)! I decided on chicken-mushroom-spinach-onion, sauteed everything, threw onto a puff pastry lined pie plate and 30 minutes later, a golden, hot, delicious and moist quiche was born.
pre-oven

post-oven!

I'd like to try a breakfast one, maybe bacon, potato, jalapeno.. or sausage & mushroom... OH THE POSSIBILITIES!
Pretty excited to have a slice for lunch.
